Ingredients (Serves: 2)
- Salmon fillet300 g
- Fennel bulb500 g
- Olive oil16 g
- Lemon60 g
- Potatoes (optional)240 g
Method
Trim the fennel and cut it into thin wedges, keeping the green fronds. If using the potato, peel it and cut it into small cubes.
Heat half of the olive oil in a lidded pan over medium heat. Add the fennel (and the potato), season with salt, add 4 tablespoons of water, cover and braise for 12 minutes until tender, turning once.
Meanwhile pat the salmon dry and season with salt and pepper. Brush a non-stick pan with the rest of the oil and heat it well.
Cook the salmon for 4 minutes on the skin side, turn and cook for 2 to 3 minutes more, until just cooked in the middle.
Squeeze the lemon over the fennel, top with the salmon and the chopped fennel fronds and serve.
