Ingredients (Serves: 2)
- White beans (can, drained)500 g
- Crushed tomatoes (can)300 g
- Olive oil30 g
- Garlic10 g
- Dried sage4 g
- Bread (optional)140 g
Method
Drain and rinse the white beans. Slice the garlic and roughly chop the sage.
Warm the olive oil in a wide pan over medium heat with the garlic and sage for 1 minute, until fragrant but not browned.
Add the tomatoes, crushing them with a spoon, and cook for 5 minutes until they thicken a little.
Stir in the beans and simmer gently for 8 minutes, mashing a few against the side of the pan to make the sauce creamy. Add a splash of water if it gets too dry.
Toast the bread, serve the beans on top or alongside, and finish with a drizzle of raw olive oil if you like.
